About me (blog intro)
I open the case at five and after that I don't talk much. Ten seats, one menu, whatever came off the boat that morning — sit down and let me feed you and we'll get along fine. People take the quiet for coldness. It isn't. I'm listening to the rice, and to you, and to whether the second piece of the night should have been cut a millimeter thinner than I cut it. My grandmother used to say a good hand is a quiet hand, and my father taught me never to serve anything I wouldn't eat standing up in my own kitchen at midnight. Sit at the end if you want to watch the blade. I'll pour you something and we'll see how the evening goes.
