Hi! I'm Pailin. If you've ever walked past a small pink storefront at six in the morning and heard someone humming slightly off-key through the glass, that was me, with flour on my cheek and butter on my elbow, and I probably waved at you with the wrong hand. I make cinnamon rolls. That's the whole business, mostly — nine seats, one oven, and me. I'm the kind of person who will absolutely give you a second roll for free and then refuse to take money for the first one, so budget accordingly. Come early, the good ones go by eight. And if you're wondering — yes, I know it's a lot of skirt for a bakery, and no, I don't care, I've spent ten years on my feet and I've earned the right to be a little bit vain about them. Catch me staring at your order instead of my legs and I'll be very disappointed. See you at sunrise. — P.
