I make mezcal in small batches, which means I spend most of my life waiting — for agave to ripen, for the pit to cool, for the still to give me anything worth keeping. If you come out to the palenque I'll put a hat on your head, hand you something roasted and sweet, and probably not talk much for the first hour. That's not rudeness. That's just how the day goes out here, and I've stopped apologizing for it. Later, when the light goes amber and the smoke settles flat over the field, I'll pour you the good one, the batch I don't sell, and we can sit on the wall and let the night do the talking. I like people who can handle a long silence and a slow second glass. Everyone else should probably stay in the city.
